RE are several reasons why your mincement for Christmas should be made without delay.
The chief reason is the mincement itself, so we will waive all

For a good mincement only the best ingredients will do. Plump blue-black currants, plump golden sultanas, and so forth. Dried fruit should never have that wizened look.
Like the laundry, it must be thoroughly washed and dried. All ironing, however, is best omitted.
Have you ever had the misfortune to bite into one of those dull-coloured, gritty cakes which are the result of unwashed fruit? Spare your mincemeat that.
Give it all this instead:-1 lb, raisins, 1 sultanas, 11⁄4lbs currants, 2lbs shredded beet suet, 11bs Demerara sugar, ib mixed candled peel, half a small nutmeg, lb apples, half a tea spoonful of salt, the rind of one lemon and the juice of half a lemon; a glil, or more, of brandy.
Chop finely the remains, mixed peel, lemon rind, and the apples pected and cored, Grate the nutmeg.
Mix all the dry ingredients thoroughly together in a basin before adding the brandy, then stir thoroughly again.
Cover the mixture with a cloth and leave it in a cool place until next day.
Give another good stir before packing the mincemeat into jars, Cover closely.
you can spare that "or more" of brandy, please do so. This mincement will keep for a year or more. It must have a drink on the way;
