WHEN next your Chinese cook makes a purchase at the butcher's stall at any of the local public markets, and it is a succulent beefsteak you'll be thinking of for your next meal, it is best to specify hung ngau, or "red cow",

This particular designation may sound odd, but it makes all the difference in the world: for, without it, you are liable to be served with water-buffalo meat!

The somewhat startling fact has been disclosed that 40 per cent. of the meat sold at the Hongkong public mar- kets, and which later goes into the pot masquerading as | "beef", is really derived from water-buffaloes of the Asiatic! variety, imported into and slaughtered by the thousands for food every year.

These figures aru secured from statisties of dealers, confirmed by actual observations by a "Telegraph" correspondent at the depot and abattoir at Kennedy Town. Those show an average killing of: 150 heads of "cattle" cach day.

But of these, only 90, or approximately six out of every ten animals slaughtered, are bullocks.

The remaining 60 are really water-buffudors, represented mostly by the larger Slames and Indo-Chinese variety in the shipments regularly made to this Colony from near-by points,
