do with the tremendous amount of fruit they are gathering from their trees at present. Windfalls are in profusion, and there are plenty of
ways of using these so that they are turned into profit- pint of pulp. Boil, stirring nearly all the time to pre-
able stores for the winter months.
Apple Jelly is
a great favourite, and keeps
extremely well. If it is put into small moulds, il makes a good standhy for the sweet course, as the little jellies can be turned out at a moment's notice, surrounded with sliced banana and topped with cream.
Cut the apples into quarters without removing the peel, but taking out the cores and any unsound parts if you are using windfalls. Put into a preserving pin with cold water to come about half way up the fruit, and cook until quite soft.
Put the pulp into a jelly bag suspended over a bowl and leave to drain all night. Do not attempt to squeeze, or the clearness of the jelly will be spoilt."
