THIS is the

way in which creams are made with sofl fruit, either fresh or enaked, The Ingredients are always the same!

3 gills fruit purer: 1 gill half- whipped cream:. oz. gelatine Hissolved in 4 ill hot water.

(A richer erennt may be made by making the fruit tree and cream half-and-half, and by using wine instead of water in which to dissolve the gelatine. On the other hand, if there is plenty of fruit and cream is too expen- alve, you can use more fruit puree than cream, but remember that the cream and the puree together must make up one pint for your

oz. of gelatine,

MAKE the fruit puree by passing it through a fine leve. The fruit may be cooked as in the case of gouneberries, for example, or imcooked as in the case of strawberries or rasp berries, Tinued fruit can, of course, also be used if desired.

When the fruit is level, see that it is as sweet as you would ike it. Have ready the slightly whipped ercam and add the fruit. puree, cold, of course, to it. Then add the dissolved gélatine, and Ur gently over jeg or in a bowl of cold water until the cronun be- gins to get, Mould at oner,
