Sprinkle the D with a large teaspoonful of castor sugar, Melt two teaspoonfuls of butter in an omelet pan. Pour in the egg mixture, and cook over a low heat, shaking the pan and pricking the mixture with a fork until it is cooked. Roll or fold, and turn out on serving dish sur- rounded with the sugared slices of orange Dredge a little more sugar over all immediately before serving. This is very good for an invalid.

Orange Gelatine Pie.

Soak two tablespoonfuls packet. gelatine in half-cup cold water for five minutes, then dissolve it over hot water. Mix together two cup- fuls of orange juice, one tablespoon- ful, of lemon juice, cupful castor sugar, teaspoonful grated orange rind, a pinch of salt. Mix these all together with the gelatine until sugar, etc, is all thoroughly dis- solved. When it begins to set stir in one cupful whipped cream, and beat until stiff. Put it into previ ously baked pastry shell and set! aside to chill.

Orange Bananas.

Peel one orange and remove all white pith. Cut inte vory thin alices, and lay half in the bottom of a small, deep fruit plate. Peel two bananas and cut into thin rounds over the top of the orange slices. Put the remaining orange alices over the banana rounds. Squeeze the Juice of half a lemon over all Then about a tablesponful of castor sugar over all. Let it remain for two hours or more before serving.

Serve with thin brown bread and butter. This is a serving for two people, and if preferred can be pre- pared in two fruit plates, and served in them
