A question was naked in Parlia ment in manfl week by Mr. T. John- ston (Soc, Dundee) as to the sale. of herrings treated with a dye and then sold as kippers. These have been on the market for some time and are really inforfart het ringa unfit for curing Capte G Northcote Crisford, en expert on fish curing, told a pross reporter that the dye is harmloss and that. the dyed fish is of inferior quality and lacks flavour. Spots of dye can be detected and the dye will come out if the Bsh is soaked in water.
