MTS.

With reference to the allegations against pickers for supplying rotten canoed meets during the Cuban War, the trouble was due to Gaby causes; to the venality of some of the army contractors! who bought up and furnish- ed old and inferior stock, and to the faverish baste of Government to concentrate "large stock at the earliest possible moment. I know a fact at the time we were so persistently hounded by the Government for stock, that we were forced to ship it out as last so we canned for to days as was our usual custom, to enable as to detect any swells resultant from imperMr. and Mrs. Benjamin, 2 children and Ehrer, Mr. and Mrs. Brush, Messrs. A. M. de z amahi, Mersin, H. l'apaley, E. Kadoorie, H. Silva, A. McEwen, J. Matheson, Behrendt, and A. C. Smith.

For

it instead of letting the stock lin on the tables Bombay-Capt. Hutchinson, Forong

were

our

fect canning. Then, after all this burry left on the railroad hundreds of carloade tracks in Florida to welier in the sun for months and naturally the swells that would have shown up and been thrown away in factory, developed in increasing ratin, Then, again, you must remember that we had only 15,000 regulars when we started that way and the bulk of the men we seat out as soldiers were volunteers-men from factories, from offices and even from luxurious homes. To many of these, exposure, a canned meat diet, unaccustomed exercise in broiling sun and ignorance of campaigning, brought sickness and death, and canned meat was picked out as a scape-gont. This, agitation was started and kept up by a prominent newspaper, whose pro- prietor and personal reasons for doing so. Thas is the public dereived in order to further the private or political ends of some individual

party.

OF

I think I may safely say that it is always unsafe to base sweeping criticăm of any in. dustry on the venality of army contractors or political schemers. It should be quite fresh in your mind that the commissariat scandals in Connection with be late Boer War were wholly deplorable, but if the quality of certain of the Australian stores supplied in the British troops is to be taken as a criterion of the general quality of the Australian canned meat output, the Australian industry must stand condemoed for ever But this method of criticism je, in fact, manifestly unfair. What happened in Australia was that unscrupulous contractors,

in order to fill their orders, recklessly bought up every available tin of meat regardless of its age and condition. And yet Australian provisions which have obtained a firm foothold in the Singapore market, are as much above uspicion as the best brands of Britain or America am myself a large consumer of Armour's canned goods, and consume them, with even more confidence in my physical well- being as the result thereof, than I should, ap- proach a banquet of so-called fresh meat pre- pared by the Singapore cook in conspiracy with the butcher.

In conclusion Inay say that it is a well-known fact that

TAINTED MEAT CANNOT BE SUCCESSFULLY TINNED.

Fermentation ance begun, it is impossible to prevent the meat in the sin from swelling wholesale. A small percentage of swells will naturally develop in all canning of meats. fruits or vegetables that are perfectly gond and fresh, but this is due to imperfect soldering, This is a notorious fact, and people who buy Unned meats have only themselves to thank

|

|

If they omit, by the merest cursory examination of the tin, to see that its inflated condition renders its contents suspect, Tainted meat is frequently bought in the Singapore market, but the "finished product" is La cunningly disguised by a liberat use of condiments that the unwholesomeness of the dish cannot be | Immedi·lely detected."

Per Tian from Manila-Mrs. Reynell, Capt. and Mm. Spinks, Mr. and Mrs. Mayne, Mrs. Da Ross and 3 children, Messrs. W. and R. Hart, Lawrence, Thompson, Malkin, Meyer, Bridges, Hornett, Alya, Hayford, Levy, Un Pak-leung, and 59 Chipere.
