THE CHICAGO CANNED MEAT
TRADE.
AND MR. NEILL'S SWEEPINO CONDEMNATION,
VIEWS OF AN AMERICAN EXPERT.
[Special # the “Singapore Free Preis."]
The cabled report of the sweeping con- demnation by Mr. Neill, American Labour Commissioner, of the Chicago canned meat industry, has a peculiar interest for us in the Straits where American tinned provisions are so much in vogue. For the past quarter of 2 century Chicago has been steadily building up an enormous, canned meat trade which now
enjoys, without using exaggerated language, a world-wide reputation, but which, for a time at. least is bound to suffer through the panic sure to be created by Mr. Neill's damaging report, How much, if any, of the value of the Labour Commissioner's report should be discounted in consideration of the under-current of political motives notoriously swaying the conduct of affairs in the United States, it is at present -impossible to way--- A previous generation-was. familiar with the corrupt methods of American trading, and the authors of the Bon Gaultier Ballads playfully satirise them in a jeu d'esprit :-
Who sold the nutmegs made of wood. The clocks that would not figure, Who grinned the bark off gum trees dark?
The everlasting nigger!
American traders, whose experts now go to all parts of the world, no longer suffer from the old-time reproach, so that Mr. Neill's attack on the Chicago canpers, will have come to most people as a
shacking surprise,
Mr. H. J. M. Ellis, who for nine years held 1 tesponsible position in the employment of Armour Packing Co and who for several years has been doing business in Singapore, express. er his views on the subject as follows:-
I think may claim to know as much as anyone in the East about meat packing house products. For nine years I was connected with one of the biggest packers in the business, a salesman, branch house manager, as travelling Inspector of branch houses and at one time had charge of the canned, meat department. In view of the meagre particulars as yet to hand, I can throw no light on the statements of the Labour Commissioner. Of course, an every. body knows, there has been going on for the last two years a great deal of axitation agnicat the big beef and pork pickers of the United States, but such agitation is of no more genuine value than any other which from time to time seeks to assail the prosperity of all big business enterprises. Their caties naturally find the ever it can te based on the scarifying plea of work of hostile criticism much simplified when

In the canning room all the employees, be. fore beginning work, are obliged to wish their hands in water containing a certain percentage of germicide, and after the day's work the floors and tables of the factory are thoroughly scrub. bed and cleansed with boiling water.
