RECIPES FOR RABBIT
TAPLES
Properly cooked, a nice rabbit takes a lot of beating. It can be made to taste as good na chicken. but care must be taken when choosing it.
Blunt and rugged claws, ears dry and tough,, prove that bunny la old. Claws that are smooth and sharp, and ears which tear "eastly, prove that the rabbit is young.
Here are some tasty ways of serving rabbit.
LARDED WITH HERBS
Larded rabbit

Joint the young rabbit, roll each plece in strips of bocon fat. sprinkle with pepper and salt, dredge with flour, and fry in hot fat until lightly browned.
Put into a casserole, cover with stock, and add a slice of lemon. pepper and salt to taste, a ten- spoonful of mixed herbs (bay leaf. parsley, thyme), a couple of cloves." and one or two peppercorns.
Cover closely, and simmer gently until the rabbit is tender.
FLAVOURSOME CURRY
Curried rabbit is something different and very tender fare. The ingredients are:-1 rabbit, toz. cooked rice, 3oz. dripping. 2 onions, 1 apple, 1 teaspoonful of desicated coconut, à pint stock, 1 tablesp. of curry powder, 1 tablesp. of flour, juice of a lemon and a little salt.

Wash and dry the, rabbit..and divide it into small joints: slice the apple and onions.
Heat the lat in a stew pan, and fry the rabbit in this until brown- ed. Remove, put in the sliced ontana. and fry till deep brown.
Add the curry powder, coconut and flour, and fry for ten minutes. Stir in the stock and, when bol- Ing. rèplace the rabbit, add the apple, and salt to taste, and cover. Simmer for 1 hours and before serving add the lemon Julee.

SATISFYING PUDDING
Savoury and satisfying. Wash and joint the rabbit, ex- cluding the head, liver and neck; they can be stewed for gravy. Season with salt, mixed herbs, and a small chopped onion. Sprinkle

Line a large pudding basin with suet crust, fill with the rabbit and pork, cover with stock or cold water. and top with a piece of crust.

WITH SAVOURY SAUCE
Bolled rabbit, removed from the bones and cut up. tastes good with this savoury sauce.

Add two or three skinned and sliced tomatoes, simmer for half an hour. then pour the mixture over the rabbit. Sprinkle 2oz. grated cheese cover the top.
SPAGHETTI RINGS WITH SAUTED SHRIMP
Cook
1 8-oz. pkg. spaghetti (broken in pleces) in boiling water until ten- der, then drain. Melt.

them, and therefore specially suitable for afternoon tea, as well as "Plain Scones." suitable either for breakfast, lun- cheon or tea.
Here are a few tips about scone- making generally:
Always sieve the four and rais- ing before rubbing in the fat.
Use sour milk, or buttermilk, if possible, as they help to neutrallad the alkali in the soda, and also make lighter scones. The exact quantity required varies according to the flour you are using, so al- ways add the milk fairly slowly. The resultant dough should be soft and easily rolled, but never sticky, Roughly about a gill of milk chould be allowed to half a pound of flour; where an egg is included in the Ingredients, a little less.. milk can be used.
Cook scones on a baking tin. sprinkled with sieved flour, and in a hot oven.
A hot oven is essential for scones as they must rise quickly without spreading if they are to be light.

8 oz. plain flour.
1 ozs. butter.
Teaspoonful baking powder
Good pinch of salt.
