EGG DISHES
There are several arguments for eggs on the menu-they are ap- Detizing. Casy to prepare and eronumical. They may be made to serve for guests in a pinch and with the aid of a tricky recipe.
EGGS PILAU
2 cups rice
4 cups
canned
chicken
Soup
8 eggs
1 tsp salt
1⁄2 cup butter "Pepper to
taste
Wash and dry rice and place with chicken soup in kettle. Cover tightly and cook over a low flame. The rice will absorb all the liquid and should be cooked about 20 Add the butter, pepper minutes. and slightly beaten eggs.
Beat for 1 minute and serve at once.
ASPARAGUS OMELET
1 No. 1 can
asparagus
tips
1 cup medium

8 eggs

Place the shortening in. frying pan over low heat. Add the salt and water to the eggs and bent with a rotary beater until foamy but not stiff. Turn eggs quickly into hot shortening. There should be plenty of shortening to keep the omelet loose from the frying pan. Cook slowly for at least 10 minutes. Heat asparagus, drain off juice, and when omelet is cooked through, arrange half the asparagus on top of the omelet.
Use a wide spatula and fold the
omelet over. Garnish the with the remaining asparagus and cream
sauce.
OTHER SUGGESTIONS Serve eggs on hot fluffy rice with curry sauce. on corned beef or beefsteak hash; on spinach with cheese sauce; on toast with mushroom sauce.
