PISTACHIO PARFAIT 2/3 cup sweetened condensed

milk.

cup water.

cup whipping cream. 'Green colouring.

1 cup Anely chopped pistachio

nuts.

1 egg white.

1 tsp. almond extract.

Thoroughly blend the condensed milk, cold water and almond "ex- tract. Whip the heavy cream to a custard-like consistency and fold into the mixture. Add the green colouring and chopped nut meats. Fold in the stimy beaten egg white Pour into a freezing pan and place In the freezing unit. After the mixture has frozen to a stl mush (1 to 2 hoursì remove from the re- frigerator.

Dissolve gelatine in hot water. Remove cup gelatine and chill two mixtures separately. Chut smaller quantity until firm, then cut into dice. When large quantity begins to chill stir in milk. Fold In diced gelatine, marshmallows and cherries, also cake. Pour into wet mold and chill until firm. De- corate with extra cherries, PINEAPPLE-ORANGE

1 pkg. orange flavoured gelatine. 2 cup boiling water.

cup pineapple juice. Dissolve the gelatine in the boll- and Ing water. Add fruit juices grated orange rind and chill until the mixture begins to thicken, and is a syrupy consistency. Remove from the retrigerator. place the bowl over ice water and beat with a rotary beater until foamy and thick. Add shredded pineapple and pour into individual molds or sherbet cups lined with orange sec- tions. Chill until arm. Unmold and serve with soft custard or whipped cream. Flavour soft cus- tard with almond extract or add teaspoon grated orange rind to whipped cream.

CHOCOLATE DELIGHT

Beat the yolks of eggs until thicks, add slowly 1 cup powdered sugar, 2 squares chocolate, melted, vanilla to taste. a pinch of salt and two generous dashes of cinna- imon. Beat the whites of the eggs untli stiff and fold them into the chocolate mixture, mixing well but lightly. Chili the mixture over- night in the refrigerator and serve It piled in sherbet glasses.

ALMOND AND RAISIN BATTER

Steve 6 dz flour with a pinch of salt. Beat in 3 eggs and pint, milk and beat for 10 minutes...

Heat 1 ..oz. butter in, fireproof dish, making it quite hot. Chop 1 oz. blanched almonds. Add them with 4 oz. seedless raisins to the batter.

Pour into the hot dish and bake for 20 to 30 mins." Serve with Demerara sugar.

LIGHT CHOCOLATE PUDDING

Make a good buttery short pastry. Roll out thinly and line some, round patty pans about one inch deep. Bake lightly for about 10 minutes.

While they are cooking prepare Alling. Shred, some mushrooms. and try in plenty of butter. Bea- son well with salt and pepper. Put" a layer of mushrooms and butter | into each pastry case.

Carefully break sufficient eggs. into a basin, and with a spoon place one unbroken yolk in centre of each tart. Beat up whites till very stiff and pour round yolks.

Bake about 10 minutes til egg is just set. Sprinkle with a little red pepper and serve quickly.
