SPINACH IN SEASON
Luncheon Dishes
Spinach is one of the most valu- -able of vegetables. It's best cook- ed in its own moisture, Wash in several waters to remove grit, then put into a saucepan with the lid on. When it begins to cook re- move the lid, add salt, and let it cook until soft, stirring occasion- ally. Add butter and pepper after draining off surplus moisture, mash well, and squeeze a little lemon juice over.
To make a spinach souffle, to a pound of the spinath cooked as above use an egg, and four table- spoonfuls of cream or white sauce. Beat the yolk of the egg with the cream. and beat up with the spinach, which should be well sleved. Beat the white of the egg to a stiff froth and fold carefully In.
