SOME BACON DISHES
There are so many attractive Ways of using bacon as a dish, especially the cheaper cuts which make it all the more valuable. The flank, the hock, the collar and the streaky cuts are all excellent in their way,
as the follow ing recipes will prove.
ROAST
Bone a piece of, shoulder hock (three to four pounds), soak it if nccessary. then dry it and stuff the hole where the bone has been with some nice forcement, as you would make for forcemeat balls. Tle it
op and bake it in a moderate,öven for about two hours. See that it 1 well basted, and serve with a thick brown gravy poured over it Another way to "roast" bacon is tbol it until it is tender. then strip off the rind and sprinkle the fat with white breadcrumbs. Put I into the oven on a baking-pari and bake it for half an hour or so.

BOILED WITH CABBAGE In France pickled pork cooked with cabbage is very popular, and in Ireland. they tell me, tacon cooked in the same way is equally well liked.
Soak the bacon if very salt, put it into a saucepan and cover it with cold water. bring aowly to the boll and simmer very genty for about two hours. for piece about three pounds in weight. Now take it out of the water and keep it warm, and in the same wa- ter boil some cabbage.
