RICE AND CHEESE SOUFFLE
2 slightly-beaten eggs
1 cup evaporated milk
2 cup cooked rice
1 cup grated cheese
Mix above ingredients together
and pour into greased

RICE A LA RUSSE

Mix flour and water to "a thi paste. Stir in diluted 'muk and cheese. Cook 19 minutes, stirring occasionally. Add rice, nuts and salt. Heat thoroughly. Serve on toast or crackers.

Mix together rice, egg and milk. Mix in thoroughly four, salt and fat. Drop by tablespoons into deep fat, 380 degrees F.. hot enough to brown a 1-inch cube of bread in 50 seconds. Fry to golden brown Drain on unglaz- ed paper.
CHINESE MOLDS
2 well-beaten eggs
cup evaporated milk diluted with.

1 cup cooked rice
1 cup grated American cheese
teaspoon salt
1 teaspoon pepper
Mix all ingredients thoroughly. together. Turn into greased cus- tard cups. Set in pan of hot wa- ter and bak eln moderate oven,' 3550 degrees F 45 minutes, or until knife inserted comes out clean.
CHOCOLATE RICE SOUFFLE
1 cup rice
1 cup evaporated milk diluted
with
1 cup water
teaspoon salt
2 tablespoons butter
cup sugar
1 square unsweetened choco-..
late, melted, or
1 cup ground chocolate
1 teaspoon vanilla
1 cup raisins
3 stiffly-beaten egg whites
Cook rice, diluted milk and sait
in top or double boiler.
When
rice is soft; add butter, sugar.. melted chocolate, vanilla, and raisins. Fold in stiffly-beater egg whites. Bake in greased baking dish in moderate over, 350 degrees F., 20 minutes or until firm. Five minutes before pudding is done, top with marah- mallows.
SWEET POTATO SOUFFLE
3 cups mashed sweet potatoes 1-3 egg yolks
f cup cream
teaspoon salt
4 teaspoon paprika
2 egg whites beaten
cup crushed pineapple
8 marshmallows

Mix potatoes, yolks, cream, salt and paprika. Beat well. Fold in whites mixing lightly. Roughly- pile in buttered baking dish. Sprinkle with pineapple and dot with marshmallows. Bake 20 minutes in moderately slow oven, Serve

SPICED FRUIT PUNCH
1 cup sugar
14 cups-water-
2 sticks dinnamon
12 whole cloves
4 cups plheapple juice
1 cup orange juice

Boll Arst four Ingredients. Strain and add to fruit julee. Mtx. Pour over crushed ice.
BAKED HAM WITH “ PINEAPPLE SAUCE
2 thick lean slices ham 1 can crushed pineapple
3 tablespoons cornstarch
6 Whole cloces
I cup brown sugar "teaspoon cinnamon Combine pineapple, cornstarch, cinnamon and 2 tablespoons brown sugar in double boiler and cook until thickened. Place this between the 2 slices of ham in baking dish. Sprinkle top silce of ham with 2 tablespoons brown sugar and dot with cloves and baké, basting occcasionally with liquid in pan. COATED EGGS WITH CREAMED · NOODLES

DEVILED ́ONIONS WITH "EGGS
Mince & cold boiled onions and z hard cooked eggs. Meit 1 table- spoon butter in a saucepan, add I tablespoon flour and blend well. Add 2/3 cup milk and stir until thickened. Season with 1 tea- spoon Worcestershire Sauce, 1 teaspoon Prepared Brown Mus- tard, I teaspoon salt, and a dash of pepper and paprika. Add this piquant sauce to the minced on- ions and eggs, place in a baking dish, sprinkle with buttered bread crumos or grated cheese, and bake in a moderately slow oven (3505) F.) for about 20 minutes or untli lightly browned. This is an un- usual dish and a very "good one. EGGS WITH CHICKEN NOODLES
When separating eggs for angel food cake, gently place yolks in large soup bowl, being careful not to break them. After cake is in oven, bring 1-quart water to sim- mering po.at, and add 1 table- spoon Cider or White Vinegar, then let yolks "slide from dish into water.
