These Meat Dishes Are As Savoury As

They Are Thrifty

It's easy to produce. wholesome and palatable meals when you have as much money as you need to spend. But if you ́ häven't then the need for economy of eat- ing leads into. a rut and appe- tites lag from the sheer monotony of eating the same food done in the same way over and over dish.

Unusual seasonings, however, can do so much for every meat dishes:

Here's a Chili Con Carne that calls for pork in place of beef and adds corn and okra in place of the traditional beans, "

Chill Con Carne

One and one-half pounds lean pork: 1/3 cup flour, 1 teaspoon salt, teaspoon pepper, 1 clove garlle, 1 cup sifted tomatoes, I cup water, 1 cup corn. cut from. cob, 1 cup okra cut in diamonds, 1 tablespoon" chili powder.

Remove fat from pork and fry out in frying pan. Cut lean meat in small cubes and toss in flour which has been mixed with salt and pepper. Mince garlic and add to hot pork fat. Saute repared niest in hot fat until brown. Mix chili powder to a smooth past with about 1 table- spoon water and add to tomatoes and water which have been heat- ed to the boiling point. Put a layer of meat in casserole, cover, with a layer of corn and okra and then another layer of meat. 'Con- tinue layer for layer until all is used, Pour over tomato mixture, cover casserole and bake in a moderate" oven for two hours or

until meat is tender. Serve from casserole.

Casserole of Hamburg and Potatoes

This meat and vegetable combi- nation depends on powdered sage and crushed bayleaf for its sea- soning.

One pound round steak ground. 1 teaspoon powdered sage 1 crushed bayleaf, 4 to 8 potatoes, 2 medium sized onions, 1 ten- spoon salt, 1 teaspoon pepper, 2 cups canned tomatoes, 2 table- spoons butter, paprika.

Trim suet" from beef steak and fry out fat. Put steak through food chopper and season with *ige, baylerf, salt and pepper. Brown quickly in hot fat. Put a layer of thinly sliced potatoes in casserole. Sprinkle with salt and pepper and cover with, a layer of meat.

Add a layer of onions thinly sliced and cover with i layer of tomatoes. Continue layer or layer until all fa used, putting dots of butter on each layer pota- toes. Make the top layer of

•potatoes and sprinkle with papri- ka: Cover and bake two hours

Potato Salad

Menus

4 cups cold boiled potatoes

I chopped onion

1 cucumber or two pickles.

4 slices cooked bacon

Cooked salad dressing

Cut the potatoes into dice or allces add the onion and sliced cucumbers or pickles. Mix with the French dressing and bacon. Mix with and chill.

Jellied Vegetable Salad

2 tablespoons gelatin

cup cold water

2 cups boiling water

cup sugar

1 teaspoons salt

cup vinegar.

1 chopped onion

cup shredded cabbage

1 cup diced celery

2 tablespoons chopped pimien-

tos

2 tablespoons chopped olives Soak gelatin in cold water Stir in boiling water, -sugar, and salt. Add vinegar, chill until mixture begins to thicken. Pour into a mold in alternate layers with the vegetables. Chill-in re- frigerator until set, turn out on platter and garnish with jelly." lettuce and mayonnaise. Any combination of vegetables or fruit may be used with this foundation. Fruit juice may replace part of the boiling water.

Tomato Jelly.

1 cup boiling water

2 tablespoons gelatin

cup cold, water

Seasoning

Combine tomato soup with boll- ing water. Soak gelatin in cold water and stir into hot mixture. Add seasoning to taste, chill in.. refrigerator until set. (Any or all of the following seasonings may be used: I teaspoon sugar, teaspoon salt, 8 cloves. seed, or a bay leaf),

1 celery.

Heat bacon fat and sdd meat. tir and cook until brown. Stir over flour and mix thoroughly. Add tomatoes, onion and parsley and bring to the boiling point. Season with salt and pepper and pour into a well buttered baking dish. Mix and sift flour, salt and baking powder and dub in shor- tening. Beat egg until light and add with milk, cutting it into flour with a knife. Spread rough- ly over mixture in baking dish which has been baking. In a hot” oven for fifteen minutes. Reduce heat to moderate (375 degrees F.) and bake thirty mmutes longer, until crust is well done and brown. Serve from baking dish.

CUCUMBER BASKETS-

Choose large cucumbers, peel them and cut into three-inch. lengths. Make these into bas- kets, leaving a handle on top. and scooping out the seeds with a sharp knife.

Frozen Cheese and Fruit

1 cream cheese

cup mayonnaise

tablespoon lemon juice

i teaspoon salt

2 tablespoons

1 bananas, sliced

Combine cheese, mayonnaise, lemon juice and salt. Mix in pineapple and nuts. Fold in bananas and whipping cream. Turn into refrigerator tray and freeze 4 hours. Blice" and serve on lettuce with French dressing..

Cottage Cheese Salad

paund cottage cheese cup minced chives or onions

1 teaspoon paprika

Cream

Add seasoning to cheese and add cream. to soften Pack in a small greased bowl or mold. Chill in refrigerator en hour or more. Serve

with a

vegetable salad. Cream cheese may replace cot- tage cheese,

Variations: arrange spoonful of current or guava jelly around mold. Make cheese mixture into balls and serve in a bowl of let- tuce dressed with sweet-sour dressing.

Ham Bolls

pound cottage cheese

1 tablespoon minced onion

teaspoon paprika

pounds sliced boiled ham Salt

Mix cheese with seasonings and form into small rolls. Wrap each in a slice or thin ham. Chill in refrigerator at least half an hour.- Serve with salad or as an appet-' szer.

Variations:

Two tablespoons

of Roquefort cheese may be mix- ed with the milder cheese instead of the minced onion,

Dried beef may replace the ham.

When ham roils are used for an appetizer, a toothpick may be in- serted in each roll.
