Fry a thinly sliced kidney „im. butter, add seasoning and a little finely-chopped parsley and onion. Some novel ways of serving the seasonable cucumber.
Cucumber Puree Salad.-Grate cucumber, add a little butter and just a drop of water, cook until "mushy,” cool.

Bake Cucumbers.-Cut cucura-.. lengthwise in halves (leaving peel on) Scoop out pulp.....and. chop. And a well-beaten egg, one cup breadcrumbs. and season to taste. Put back in the shells and hake in moderate oven for forty- five minutes.

Much Mayonnaise
Summertime and cold dishes tend to recreate an interest in the many sorts of Mayonnaise sauce, Do not be "misled. by the way, as I have heard of others doing, into thinking that Mayonnaise Sauce is the same as Salad Dressing.
If one thing is necessary in the serving of Mayonnaise, it is that 1 should be freshly made, or it will rapidly go dry. While there are, I believe quite good bottled Mayonnaise Sauces on the mar- ket. It is very simple to make your own, and you can thus be sure that it is flavoured, just to your liking.

Here. then, are the different kinds of sauces which have Mayonnaise Sauce as their base;"
1. "Sauce Andalouse."-This 13 Mayonnaise strongly favoured with tomato puree, and garnished with' little diès of sweet peppers. 2. "Sauce Bohémienne."--This a little differend being 趋 cold Béchamel Sauce bound with egg- yolk, seasoned with salt and pep- per, and mixed with vinegar. It is then mixed with clive oil, in exactly the same way 33 器 Mayonnaise, and finished with a little tarragon vinegar.
With Anchovy Fillets
3. Cambridge Sauce."-Make a purée by pounding in a mortar hard-boiled egg-yolks, anchovy Allets, "capers, chervil. tarragon, chives, mustard and a dush of cayenne. Proceed in exactly the same way in adding olive oil and vinegar, and finally pass it through a fine steve, ending with a little chopped parsley...
4. "Sauce Chantilly (not to be confused with "Crème Chantilly).”
This is Mayonnaise made with lemon juice instead of vinegar, and completed at the moment of serving with whipped cream.
5. "Gloucester Sauce."--Mayon- naise is here flavoured with sour cream, and finished with "a few drops of Escoffier Sauce and" a little chopped fennek"-"-
6. "Green Mayonnaise." Blanch some watercress, parsley, chervil and tarragon, drain them and "pound them. Press through a
hair sieve and use the purée to colour (and flavour) the Mayon- naise.
7. "Sauce Gribiche."This Ma- yonnaise is made with hard- bolled egg-yolk and flavoured with a little mustard. When it is ready, mix in some chopped gherkins, capers chervil parsley. tarragon, and fine strips of the white of hard-boiled eggs.
8. "Sauce Italienne."-Lemon is used instead of vinegar for the" Mayonnaise, which is garnished with chopped cooked brains and "chopped parsley.

Horseradish Here 9. "Mayonnaise à la Russe."- This Mayonnaise is made with tarragon vinegar, and Davoured With grated horseradish. Slightly warmed meaf jelly is then whip- ped into it.
10. "Mayonnaise au Ralfort.”— › Simply add grated horseradish to aplain Mayonnaise sauce.
11. "Red Mayonnaise."-Colour the Mayonnaise elther with a little pounded red pepper (pimen- -to), or with the pounded coral' of
lobster.
12. "Remoulade Sauce."--Mayon- naise, flavoured with mustard, garnish with chopped capers, parsley, gherkins, chervil, and tarragon is finished with a drop or two of anchovy essence.
13. "Sauce Russe."This is a
mixed with Mayonnaise
the creamy part of lobster and purée of caviare, seasoned with mustard and a few drops of Escoffer sauce.

14. "Bauce Tartare."-This is a Mayonnaise made with hard- boiled egg-yolk Garnish it with spring onions and chives finely chopped. It should, be rather highly seasoned,»
15. "Bauce Verte."This is the same as Green Mayonnaise.
16. "Sauce Vincent. This is made by mixings equal parts of Tartare sauce, and Green Mayon: naise.

Fillets of plaice, sole or whiting are all choice invalid food. But- ter two plates. Lay the Allets on ane, squeeze a little lime juice over them, add pepper and salt. 2 cups, grapé-nuts with:- 14 pinta mik. Let soak until cold.
Beat
2 egg yolks with,
1 cup sugar until light, then add
other pint of milk to which
2 tablespoons cornstarch has been added. Fold this into the grape-nuts, Beat
2' egg whites to stiff froth and
-add to whole.
Vanilla for flavouring can be added -- If dested. Pour into greased baking pan. Bake in moderate oven until pudding sets. Serve with lemon sauce.
