Let's Have Muffins
The method of mixing all
kinds of muffins is the same- dry ingredients sifted tögether

and mixed with the milk and melted fat; and this liquid mix- ture added to the dry ingredients and beaten vigorously until they are just moistened. Do not try to make a muffin batter smooth. It fruits or nuts are to be added, save a tablespoon or two. of the flour to coat them with. Cran- berrries are rolled in sugar first. Mix a muffin batteras quickly as possible and avoid overstirring, as that cause the 'muffins to have peaks and tunnels. Warm the muffin pans a little and they will be easier to grease.
To be at their best any muffins should be timed so they can be served as soon as they are baked. If you have any cold mufāns left. they can be split, buttered, and toasted for another meal. Bake
muffins in a hot oven (400'-425° F.) for 20 to 30 minutes, depend- ing on the size of the muffin.
Plain Muffins
2 cups sifted flour
4 teaspoons bakingpowder
1 tablespoon sugar, if desired
teaspoon salt

1 to 4 tablespoons melted but-

Graham Muffins
14 cups. unsifted graham flour

Do not stir the

3 egg yolks
2 tsp. chopped celery
1 tbsp. chopped parsley
3 egg whites, beaten Melt butter and add flour. when blended add milk and cook until creamy sauce forms. Stir constantly. Add yolks and beat one minute. Fold in remaining ingredients and pour into a but- tered baking dish. Set in a pan
of hot water and bake 35 minutes in a slow oven. This recipe ser- ves 2 by doubling 4 will be served.
Escalloped Ham And Potatoes
If you would like to serve a hot supper this dish is excellent an It is a complete meal with the addition of a salad.
1 lb. slice of ham
3 cups sliced potatoes
3 tbsp flour:
1 tsp. paprika
1 tsp. chopped onion
1 tbsp chopped green peppers 1 cups milk.
Blend potatoes, four and sea sonings. Cover bottom of a but- tered baking dish with part of the potatoes. Add the nam and cover with remaining potatoes and add milk Cover withr lid and bake 11 hours in a moderate. oven. Remove lid during last 20 Hainutes of Baking to enable the dish to brown on top.

Cheese may appear with the appetizers, form the basis of the main dish and serve as des- sert. Not all on the same menu, of course, but utilized at diffe- rent times they prove their variety and palatability over and over again. If you are planning a Sunday night supper and want your main dish to be prepared in advance try making this delicious cheese ring-it's as decorative as " It is good to the taste.
Cheese Ring
1 cups cottage cheese
1 tsp. salt
I green pepper
cup cold water
1 can pimento
2 tbsp. gelatine
2 cups cream, whipped Peaches, pears
Soak gelatine in cold water and dissolve over hot water. Put cheese through a sieve, add“ salt, pepper. and.pimento. stir in gela- tine and mix well. Place in s ring mold that has been rinsed in cold water and t star for sev eral hours in the refrigerator.
Turn out on a bed of fettuce and arrange a border of alternating" peaches and pears. In the centre place mayonnaise.

Frozen Fruit And Cheese Salad
I
1 cup canned pineapple, diced
medium size bannana
Enough mixed fruit to make
2 cups
1 tbsp. sugar
2 tsp. lemon juice
1 tsp. salt

After fruit is prepared add su-

Cheese Chops
cup grated cheese
1 cup crumbled butter crackers
2 eggs... beaten
+ cup butter
2 tsp. parsley
"Salt and pepper
Mix all ingredients. Shape like chops. Fry. Serve with lettuce salad dressed" with piquant French dressing...
A Delicious Sandwich Cream one package of cream cheese, add 1 teaspoon orange rind, grated, 2 tablespoons chop- ped candied ginger and enough orange juice to give spreading consistency. Spread between thin alices of white bread.
Cheese Balls Combine i cup grated American. cheese with 1 teaspoon flour, teaspoon salt, and a dash of cay- enne. Fold in the stiffy beaten ' whites of 2 eggs. Shape, by, tea- spoonfuls in balls and roll in egg yolk combined with 2 tablespoons of water; then roll in one crumbs and repeat the egg-crumb pro- Stand for 5 minutes to dry and fry in deep hot fat. Serve very hot.

Cheese Alaska Poach 4 fish fillets or 2 slices of halibut l court bouillon. This is made by almmering for hotronlon, a sliced carrot, 2 peppercorns, a bit of bay leaf, a tablespoon of vinegar and the fish trimmings in 1 quart of boil- ing salted water. Cook the sh for about 10 minutes.
Cover a baking platter, 5 x II ches, with rich cream-cheese sauce. Place the drained, poach- ed fish on this after cutting into 5 portions. Cover each piece of fish with hills of egg meringue. For this beat 4 egg whites with 4 teaspoon vinegar and † tea- Spoon cream of tartar till the eggs are ropy. Brown under the broll" er, 6 inches from the fame. Garn- lah with watercress.
Cheese Sauce
Melt 2 tablespoons fat; add 3 tablespoons Hour, F teaspoon salt and a dash of paprika, Blend well Gradually add 2 cups of mild and stir til thickened,

. Mix and sift the dry ingredi- ents, and then work in the short- ening. Add sufficient milk until you have a soft dough. Roll it on a floured board until † inch thick. Spread with butter and sprinkle thickly with the grated cheese. Then roll and cut it in about inch slices. Place in a greased pan, cut side up. Then bake in a hot oven for about 15 .minutes.

2 tablespoons bacin fat or drip- ping: 1 medium sized onion, min- ced, 1 quart meat stock, 1 pint, tomato pulp, fresh or tinned, 1 cupful cooked lima beans, 1 cup- flu cooked rice, cupful each chopped cooked carrots and cob- hage, 1 teaspoonful salt, à teas „spoonful pepper. Melt the bacon or other drippings and cook the onion in it until it begins to turn colour. Add the stock, the tinned tomatoes and rice" and "simmer. for 20 minutes. Then add the carrot and cabbage and the beans. -- Season with the salt and pepper and serve with greated cheese.

1 Ib. habboo shoots, 4 02. shrimps (meat), 1 tablespoon
lard, pepper and salt, stock, Shell shrimps. cut meat and bamboo shoots into small pieces and try in the lard for a few minutes. Add salt and pepper' and a little stock, cover and let stew until cooked.

1 cupful rasberries (tinned), 2 cupfuls whipped cream. 3 table- spoons, sugar, 11 teaspoons gela- tine, 2 tablespoons cold water. lady, Enger biscuits or thin slices cake. stale sponge
Soften the gelatine in cold water; then place aven bot
water until dissolved. crash the raspberries and add the angar. Whip the cream mtil stiff, add the dissolved gelatine and the fruit, and pile in Sherbet glasses or small, dishes lined with the lady fingers or sponge cake. Chill before serving. "

Eggs baked in various ways are a pleasing change from" the re- gular soft-cooked or "ham-and-" for breakfast or the acrambled eggs or omelet at lunch time.» The main thing to remember in connection with baked eggs, is that as with other ways, of cook. ing eggs. very moderate heat should be used to avoid toughen- lng the protein.
