For this maigre meal, the ome- lette can be greatly improved by the addition of paprika pepper. The potatoes are baked in their Jackets the insides then removed and mixed with some cold flaked fish-smoked haddock or salt cod, for example. A hint, of onion will be an Improvement, and a binding of white sauce, perhaps. The mixture is then put back into the shells and warmed, through in the oven.

You can use up some cold spinach, or the tinned sort, for the souffle, which-LL used on any other day would be improved by the addition of some tiny dice of lean cooked ham. Do not forget a suspicion of nutmeg here, too.

Potage Puree de Haricots Blanes. For 3. or 4 persons, put pint of haricot beans on the fre with enough cold water to co- ver them completely, and a small onion. When cooked take out the. onion and rub the beans through a sleve, add a little milk return them to the saucepan with a little butter and salt, heat, but do not boll, and serve with bread cut in dice and fried in butter.

Soless Aux Fines Herbes Et Au Vin Blanc.-Clean one or more soles according to size, and scrape the white skin. Place in a Are- proof baking dish a piece of but- ter as large as an cgg. When it is melted add to it some Anely chopped parsley, and shallots, salt and pepper. Place your sole or soles on this and sprinkle more butter parsley and shallots over them. Pour in a glass of white wine and dust with fine white breadcrumbs. Place some bits of butter on them. Bake until cooked and a fine 'colour. Serve in the dish in which it has been cooked

lb. of beefsteak 2 or 3 to- matoes; 2 dessertspoons chopped onion, 1 oz. of four; oz, of but- ter or dripping: seasoning: A pint of stock; toast. Put the steak. through the mincer and mix it with the onion. Melt the fat in a saucepan, add the flour and stir it over low heat yatul brown. Draw the pan aside, add the stock gradually, bring it to the boll and them add the pre- pared meat, onion and seasoning to taste. Simmer the steak gently for about of an hour, then turn it on to a hot dish and garnish it with slices of tomato, which should have been heated in the oven and small triangles of toast.
