Spaghetti and Ham Cakes- 2 oz. cold cooked spaghetti, oz. ham. 2 or 3 tomatoes, 2 table- spoons cheese (Anely grated), sea- soning. oz. butter oz. flour, gill stock, egg and breadcrumbs. Skin one of the tomatoes and chop it up. Melt butter, add flour str in the stock and chopped tomato and, bring the sauce to the boll Stir in the ham previously minced also the chopped spaghetti, and grated cheese, Season to taste, spread mixture on plate to cool. Divide into 4 portions and form them into round cakes. Brust with egg, coat with breadcrumbs and fry till golden. Decorate each. with a slice of tomato lightly bak- ed and garnish with parsley.

This is an excellent family cake, The ingredients are a pound of fine

flour, a pinch of salt, two tea- spoons baking powder, four canoes of butter, six ounces of fruit, either sul- tanas, currants
ur stoned raisins, four ounces of moist sugar, half a small nutmeg, grated, two eggs and half a pint of milk. Mix the baking powder with the salt and flour, then lightly rub in the butter. Add the sugar, fruit nutmeg and mix well. Moisten with the beaten eggs and milk. Bake in moderate oven for an hour and a half. If Simpson's flour is used, omit the baking pow- der and salt. In fact we suggest you use the Simpson's as it is) cheaper and less troublesome. You are sure of obtaining the best re- suits if you do so.
BAKED BLUEFISH--- OYSTER STUFFING
Four pounds blue fish, two cups small oysters, 1 teaspoonful salt 1/8 teaspoon pepper, 4 table- spoons melted fat, 1 cups dry bread, crumbs. Have the fsh dressed and
eleaned. Wipe inside and outside with a damp cloth, Rub inside with salt. Drain oysters of liquor, mix. with salt, pepper, crumbs and fat add a little liquor if desired. Stuff the fish and sew up opening. Put a layer of minced salt pork and minced onions in bottom of baking POL. Dredge the fish with salt, pepper and flour and lay in pan. Place two thin slices of salt pork on top, add 1 cup boiling water. Bake in oven 15 minutes, reduce heat and bake about 45 minutes. Serve with lemon and parsley,

Satisfactory desserts may be frozen without stirring by packing in ice, and salt or by placing in the trays of, the mechanical refri- gerator. A fairly rich mixture must be used in these desserts and the ingredients carefully combined in order to obtain a satisfactory texture. Buch ice creams are never so smooth as those prepared in a freezer with a dasher but are less trouble and, properly prepared, have a flaky, crystalline texture quite characteristic and desirable:
