Beat the butter to a cream, add the yolks of the eggs one at a time and beat well. then add the mustard, salt and pepper stirred smooth with lemon juice. About 5 minutes before serving add the boiling water a little at a time stirring well. Place the bowl in a sauce pan of boiling water, and stir rapidly until the sauce thick- ens like, boiled custard: "Minced parsley, onion Juice or grated onion may be added. The juice and grated rind of orange added makes

3 oz. breadcrumbs; pint milk; 3 oz. sugar; 2 egg; 9 oz. sultanas; 2 oz. mixed peel; 1 oz. loaf sugar; gill sherry. Meit loaf sugar in a Stir till it turns to saucepan. caramel, Add milk. Let caramel dissolve. Mix cleaned sultanas, chopped peel, breadcrumbs and sugar in a basin Add beaten egga to milk and sherry. Strain over bread mixture. Soak an hour. PUMPKIN SPONGE PIE

1 pint sifted pumpkin pulp; 3 eggs; cup sugar 1 tablespoon butter; 1 pint milk 1 teaspoon salt; teaspoon nutmeg or ginger. Pie crust.. Melt the butter and add with the egg yolks, sugar, pumpkin pulp, salt and spices to the milk. Best well and fold in the egg whites, whipped stift. Pour into a deep pie plate lined with crust, build up the edges and bake accord- ing to other pies

BUTTERED CRAB

4 small crabs; 2 oz. butter; juice of 1 lemon; 2 oz. breaderumba; pepper and salty cayenne to taste; 1 tablespoon pursley. Boil the crab. Pick the meat out the shell, cut it into small pieces and mix all well together with the breadcrumbs, parsley and small pieces of the but- ter. Season with pepper, salt and cayenne to taste. Pack into the shell and squeeze ofer it"the_juice of a lemon or ach a spoonful of vinegar, cover the top with a layer of breadcrumbs. Put small pieces of butter over it and bake in a

moderate oven for 30 minutes.

RICE AND FISH LOAF

3 cupfule bailed rice; 2 cupfuls flaked cooked fish; cup thick white sauce; 1 teaspoon onion juice; 1 teaspoon minced parsley; 1 egg; fleshed fish, salmon, fresh or tinn. ed, may be used. Add the butter, amelted, to the rice. Butler a mould or brickshaped pan and line it with the rice reserving a little to spread over the top. Full the cavity with the fish, minced and mixed with the other ingredients, and spread the remaining rice over the top. Steam or bake the loaf done, about 40 minutes. Serve with tomato sauce or egg sauce.
