Baked Fish
Baked stuffed fish is one of nicest dishes you can serve your family for lunch on a hot day. It's the planning and prepara- tion of hot dishes which cause the home-maker trouble and worry. Easy enough to have all the ap- petizing cold dishes-but everyone needs at least one hot dish a day, no matter how high the tempera- ture rises.
Fish is simple to prepare and easily digested.
Here's the way to make, stuff and
serve a fish which will serve four. people:
You need a two and one-half pound Ash, loaf of stale white bread, 1 small onion. I corn on the cob, 2 large tomatoes, 4 small new potatoes, 1 pound string beans, 4 patty shells, 1 cup milk or 1-2 cup of cream, 1 tablespoon- ful of butter and a few anchovies. You may use lapu, mackerel, sea bass or any other fresh fish which your favourite market has in stock.
Clean the fish, "alit" carefully and remove the backone without dis. turbing the meat. Make a bread Aking out of the soaked staln bread, chopped onion, thyme and seasoning: Stuff the ash with he filling.
Place in an oven and allow to bake 30 or 40 minutes. While the fish is baking, prepare the vege- "tables that are to be served with

Boil or steam the corn on the 'cob. When it is quite tender, cut off the kernels. Place them in a saucepan and add buttermilk or cream, salt and pepper. Stir the mixture while you are heating it. Do not put the creamed corn in the patty shells until just before you are ready to take the platter of flah to the table."
Halve the tomatoes and bake them in a saucepan to. which has been added enough water and but- ter to keep them from burning."
Boil the string beans and pota- toes in the ordinary manner.
When the fish is cooked, place It on a platter and arrange the vegetables around it. Two halves of tomato, two patty shells filled with creamed corn and two boiled potatoes should be placed on either alde of the fish. Sprinkle the string beans over both fish, and other vegetables.
Garnish the baked fish with an- chovies.
Waffles. Whittaker's Jams are particular- ly good when served, with fluffy hot wames for which we will give you the recipe:
One cup Swansdown or Slump- sons self raising flour sift 3 times. 2 tablespoons melted butter.. 4 eggs and a pinch of salt. Enough milk to make a medium batter.
Beat egg yolks, gradually add nour and milk alternately then put in melted butter. Fold in egg whites which..have been beaten stiff To get the best results use an Electric Waffle Iron, which should be well hested before pour- ing in batter:

Cake Failures May Be
To Various Causes
There are a number of things which might cause cake failures and here is a list of them. Check them carefully and you will pro- bably be able to correct existing cake troubles:
When a cake "falls in the mid- die" it may be caused by insuffic- lent quantity of four or leavening Ingredient.
Ör incorrect oven temparature, or removing from the oven before sufficiently baked.
Heavy cakes are often occasion- ed by too slow an oven or too large an amount of sugar and but- ter.
A cake is sold or "bready" when too much flour is used.
An uneven surface with cracks on the top of the cake occur when too much flour has been used.
Or too great a heat is used at the first part of the baking time. Coarse grained cakes may be due to too much leavening ingredient,

Bake-in greased muffin tins in hot oven at about 450 degrees F. for five minutes. then lower the heat for half an hour, at 400 de- grees F. Makes twelve large pufis. Fill with Royal Vanilla or Royal Chocolate Pudding made according to the directions on the package. Have the pus and pudding cold before Alling.

Lace Curtains

Fragile Ince curtains -never be rubbed or the threads will soon break and the curtains wear out quickly in consequence.
The best method is to fill à large milk or wine bottle with soapy lukewarm water. Push the curtain through the neck of the bottle, and, with one hand over the open- ing, shake the bottle brisky for some minutes. Repeat this process until the curtain is clean. Wash- ed in this manner, the lace can- not possibly tear.
If the lace is coffee-coloured it should be passed through a rin- aing water consisting of weak or the to strong coffee, according shade required. Roll it up in a towel and iron with a fairly hot tron after about an hour.
The lace should be ironed fairly damp as it will then come up the right stiffness without starching.
The easiest and cheapest way in the end is to send them to the Steam Laundry, your curtains will look like new when returned to you..
APPLE, TOMATO AND BACON SAVORY
For four people, allow eight French prunes, one large sweet. apple, eight small rashers, of,ba- con, two tomatoes, four fingers of toast.
