Kettles that boil quickly and without waste of fuel will save both time and money. The old iron kettles of our grandmothers were | very uneconomical.
It is important to choose both the material and shape of a kettle pro- perly if the best results are to be obtained.
The material of which it is made should be a good conductor of heat so that the heat can easily get to the water inside. The best conduc. tors among the common metals are copper and aluminium but they are both of them rather expensive.
The ordinary tin kettle, which is actually made of iron coated with tin, is excellent and cheap..
As to shape, kettle should be chosen which has as wide a base aa. can conveniently be used, and "it should be shallow. This allows the heat to come into contact with the greatest surface of the water, and moreover, in boiling on a gas ring, does not 'allow flames to go curling up the sides where most of their heat is wasted.
Inside, chalk will accumulate, especially when the water is very hard. This may to some extent be mitigated by putting pieces of rough pumice stone or similar harmless substance into the, kettle and thus giving extra surface for the chalk to deposit on, but these only take up heat and are not very effective. The crust can also be removed by weak acids such as vinegar.
It is, however, much better and more economical not to use a kettle too long. As tin kettles are cheap, it is then more economical to buy. Ja new kettle than to waste fuel on
