It is well known that, during the great French wars, the health of the Navy was maintained by the frequent issue of fresh provisions, and that Nelson was especi ally zealous in this respect..
Here we have the actual figures of the number of oxen bought, of how much beef they yielded, of the number of pounds of onions and other vegetables, and of the oranges and fenions. There are probably nore papers on this subject here than on any other.
Returns from the agent victualler afloat show that, between February 13th, 1501, and April rd, 1805, the disbursements on fresh provisions were £47,000, which, averages £100 a day. Included in them' were about a million pounds of fresh beef, nearly 200,000 gallons of wine, about.j 10,000 gallons of brandy, with onions, oranges, and lemons in proportion. As the beef cost about 4d. a pound, and the wine 13d gallon, and as the comple ments of the ships with the flag averaged about 6,000, this shows that the ship's companies saw little of the traditional salt horse and rum. On the contrary, the expenditure for fresh provisions, as far as can be thus determined, was about d. n head a day. Whenever any article of food was complained of, it was im- mediately surveyed and almost invari ably condemned.
