INTRODUCING: SCHOOL FOR BRIDES

TASTE, TASTE,

TASTE, TASTE ALL

THE TIME!

Four young women join HELEN BURKE in a personal course in cookery, designed specially for__newly-marrieds.

and for those about to

be

THE way to a man's heart, it seems, still goes by way of the kitchen. This is proved by the large number of brides and brides-to-be who wrote asking to enrol in my short cookery class. The class hud to be limited to four. All the pupils had this in common: they wanted to add sparkle to supper-time. For my part. I want to make them into inspired chefa.

Four sesalons of two and a half hours each does not give me much time. So I decided to pack by baste dishes which can easily be used to create other exotic ones, or at least meals a little out of the ordinary.

You will notice that I am constantly asking may pupils to bate the dishes. I set great im- rance on tasthig. No one, however ambitious, will ever beeome a really good cook unless she Tastes at every stage of cooking.

So Rule No. 1 1: Remember to taste, tuste, laste, all the time.

We shall measure everything when necessary. But when it is to important we shall throw exsul calculation to the winds. Every cook

salt should be able to cook at times by instinet, something ke musician playing by ear.

This rst lesson

the first course. It takes in a pate, a sea-food cocktail, a basic soup with variations, and

Moules Marinlore, the mother

ant father of all mussel dishes.

WE then returned the sauce to the heat and stirred it until I thickened and left the aldes of the pun.

The liver puree mixture was then slowly stirred Into the whlle auuce, then the seasoning. We added freshly milled pepper and rock salt. I tasted the mix- ture and so did the girls, and they liked . We added more salt and, finally, a lo sherry. We had three tastings at this stage and they decided the

In each of four glasses we placed about a tablespoon of shredded heart of lettuce, then added one ounce shelled prawns and the sauce.

First, I turned three table- spoons tomato ketchup into bow! and added an equal double amount of

cream. I slirred the two together, add- ed a little milled rock salt and freshly-ground pepper and ask ed the girls to taste the mix- ture. They thought it good, but decided that it needed a little more tomato ketchup and that Utle grated horse-radish would not be amiss.

The best potatoes for this soup are Majestics, We added Just enough double cream to change the character of Tomato Soup to Cream of Tomato Soup. No measurements-just "palate."

To another three ladles of the sleved soup 1 added three table- spoons of Anely chopped waterTM cress and cooked the mixture for 10 minutes. We tasted and liked it. Finally, to serve this soup, drop a tow uncooked watercress leaves on top.
