Cottet, general manager of the Gordon Hotels, invited Cavaliere Barto- lomeo Calderoni, a distinguished member of the Old School of Maitre Chefs (now, alna! fast retiring), to take over the kit- chens of the May Fair, so I knew that the food I would see prepared there would have received the approbation of the great Escoffier.
