Baked Ham Loaf with Foamy Mustard Sauce la appetising
When we were just learning to cook and to plan meals, mother would often remark, "Remember, there's no law against saving your- self work. Do things the easy! way when you can."
The advice is especially Atting for the hot spells of summer when
11⁄2 tablespoons dry mustard.
1 tablespoon flour.
1⁄4 teaspoon salt.
1⁄2 cup vinegar.
1⁄2 cup condensed consomme.

For instance, in the following two-day plan notice that the ham loaf is the type of meat dish that is equally appetising hot or cold.
On our first day's meal, the loaf is served hot, with a sharp provo- cative sauce. But first, here's the plan for the whole meal:

BAKED HAM LOAF
11⁄2 pounds raw ground ham.
1⁄2 pound fresh porit.

SLICED CUCUMBERS WITH CREAMY MUSTARD DRESSING
6 tablespoons whipping cream 1⁄4 cup "foamy mustard sauce"
2 cucumbers, sliced
Beat the cream until stiff. Fold the "Foamy Mustard Sauce" into upper part of double boiler, when the whipped cream and serve over hot pour over the sugar mixture. the sliced cucumbers. Then pour all into double boiler and cook until slightly thickened.] Stir in the beaten egg yolks very gradually and continue cooking. about 3 minutes. Beat the egg whites until stiff, add the hot mix- ture gradually and stir or beat! well.

Makes approximately 13⁄4 cups of sauce. Serve with Baked Ham Loaf,

But we do need some hot food to give, balance and contrast. Besides hot food aids digestion, especially when it comes at the beginning of the meal.
