Meg Dod's Marmalade Scotland's Gift To English Breakfast Tables

Connoisseurs of happy living, stressed the joys of the table, but now the jade Fashion has made us diet-conscious-and gone for most of us is the fun of food.
The invasion of England by marmalade, as a breakfast dish seems to have travelled via Oxford University, where undergrads 'or- dered "squish" to add to their but- "Is it fattening?" That self-con- tered toast, bacon and eggs, and scious pipe is the curse of every coffee. Probably those admirable hostess, and...convivial, carefree ladies, "maiden aunts," added it to conversation of other days now vanishes before the avalanche of vitamins, proteins, and whatnots, which swells the vocabulary 0' every food faddist on a diet.

But when marmalade was so pre- cious that only the most beautifully engraved crystal jar was considered worthy of it, to be known as a "marmalade-eater" was the mark of "one daintily brought up." To be offered a serving of marmalade with a solid silver spoon was a ges- ture of the truest hospitality-en- tertaining was a joy and conversa- tion "a feast for the soul."

Kieler, a famous jam and mar- malade manufacturer from Dundee, then began making marmalade in bulk, Mass production made prices cheaper, and white earthenware jars, in one, two, three, or five pound sizes, soon became a familiar sight in grocers' shops. Originally tied with bladdiers, but later parch- ment, the neat white label with black lettering became an emblem of quality.
Now oranges are here again, and the new season's crop is best at the beginning, so perhaps a revival of Meg Dod's recipe will be welcome. MEG DOD'S SCOTS ORANGE

server of a delicious meal. There marmalade was served as a special relish with hot, boiled ham, pork, duck, and goose; the novel idea being so popular that it was felt to be a breach of good manners to help oneself to a large portion.
