WATERCRESS SOUP

As food is mncreasing in price so rapidly I am giving my own original recipe for what is a very cheap, nutritious and quickly pre- pared soup.

I use watercress, which never seems to be used except as an ac- companiment to bread and butter or as a garnish. Watercress is

One lb. potatoes, 1 large, onion, 1⁄2 pint milk, 1 saucerful finely chopped watercress, 1 oz. butter, salt and white pepper to taste, 1⁄2 pint water.

Chop onion finely. Peel potatoes and slice them. Boil potatoes and onions in 1⁄2 pint water, till they can be mashed up in the saucepan with the water in which they are boiled.

Add butter and watercress. Stir well and add milk to make all like very thick cream. Season with salt and white pepper, and simmer for 10 minutes, occasionally stirring to keep it from sticking. Serve with fingers of dry toast.-H. E. H., Newbury.
