An Economical Cheese Souffle. This is not a recipe for a true souffle, but for a mock affairseasier to prepare nerve-racking to cook.
3oz. fresh breadcrumbs; 2-305, cheest (grated); 1⁄2 pint milk; 1⁄4 teaspoon dry mustard; pepper.
Method. Mix the dry ingredients with the milk and egg yolks. Fold in the stiffly beaten whites and pour the mixture into a buttered souffle case or into individual fireproof dishes.
Allow plenty of room for the souffle to rise.
Bake in a moderate oven until firm and brown, i.e., thirty to forty minutes for a large souffle or fifteen to twenty minutes for small ones. Sprinkle with grated cheese and serve at once.
