SEA FOOD EXPLAINED
Occasionally complaints have been made that broken glass was found in canned crab, lobster, sal- mon and shrimp. In each instance laboratory tests showed that the particles found resembled ground' glass. Further observation Jed the chemists to believe that the substance was not glass, but. chemicals of some crystal com- pound.
The pieces, were placed in water containing a little acid and proved to be soluble, demonstrating that they were not glass. This test established the fact that the cry- Istals would dissolve in weak acid such as is found in the gastric juices of the normal butmen stomach.
The crystals are soft, being – no harder than ordinary salt. They can be scratched, crushed easily and dissolve readily, and though have claimed many complainants damage to teeth and gums it seems impossible that such protests were justified. A chemical analysis showed that they contained magne- sium, ammonia and phosphoric|
They are known as magne- phosphate or "struvite" which is a perfectly harmless substance. These cry stals are composed of valuable food elements and are formed in the can after sterilization.
