Adaptable Scarf Collars.

1 medium lobster, 3 tablespoons milk, oz. four lemon juice, oz. butter, 1 tablespoon cream, 1 egg white, cayenne to taste, salt and pepper to taste. Melt butter in a saucepan, stir in flour, then milk, and when smooth, bring to the boil. Cook 2 or 3 minutes, stirring constantly, then stir in sait, lemon juice, cayenne, and pepper to taste, then the minced lobster, cream and stiffly frothed white of egg. Pack mixture in a well buttered leaf, tin, covered with buttered paper. Steam for 45 minutes, then turn out and serve with Bechamel Sauce,
