OUR SWEETMAKING CORNER
A New Way With Coconut Cream
Put one pound of granulated su-, gor into a saucepan with a tencup- ful of water, and allow the sugar to dissolve slowly. Boil the syrup for five minutes, then stir in gradually one pound of finely grated coconut. (When buying your coconut ask for the grated, not the desiccated.) Also add A quarter of a pound of preserved ginger cut into small strips.
Stir the mixture carefully over heat till it begins to candy. Then remove the saucepan from the fire, and turn the cream ou to a dish spread with greaseproof paper. Shape into a nice block with a kaife, and cut into bars when cold. Wrapped in greaseproof paper and tied up with gold string, these bars make very nice presents.
