2 cups boiling water
Clean and truss turkey.
Chill
until ready to bake. Stuff turkey, sew up cavities with stout thread. Arrange in baking pan and rub with salt and flour. Cover and bake 15 minutes in hot oven. Re- duce heat and baste turkey with butter and water. Cover and bake for 4 hours. If the turkey browns too much, during the last hour of baking cover with a cloth dipped in warm water. This will make the fowl very moist and give a soft crusty skin which is desir able.

Mix sugar, flour and salt. Add prune juice and prunes, Cook slow- ly and stir constantly until pudding is thick and creamy. Add rest of Ingredients and cook one minute. Pour into glass dishes Cool and chill. Serve with plain or whipped cream. This dessert can be made the day prior to serving.
