BRITISH BREAKFAST.

FRUIT NOW COMES TO

THE FORE...

Social observers are noting a change" in that time honoured institution of the British breakfast, says a writer in the Daily Telegraph. They base their deductions upon markat-reporte which tell of an increasing ernsumption of grape-fruit, melons, and bananas, which are relatively unw additions to the menu of the first meal of the day. They might go farther, and draw infèrences from the varieties ...ol-- cereals offered in the price list of any popular store. As is usual when people set themselves out to discourse upon changes, they are gloomy on the subject, and fear that it portéade some sort of domestiaravolution, For many, a majority perhaps, had come indeed to the habit of thinking of the English breakfact as ora: I the things which marked us off from the rest of the world, a racial institution.

For other nations. the trivialities of coffee and rolls might suffice. To make Englishmen, a breakfast of averal heavy course was DECEKTY, But this simple faith is only one more example of the weakness of human Dature. We are apt to believe that what is has always been and must al- ways bo.

A MODERN INVENTION,

.

The English breakfast as an Osca upon Pelion of heavy food is, in fact, a modera invention. Loss than a century ago the breakfast table at a great London house offered nothing more than tes and coffee rolla and butter, and some boiled eggs: Such is Macaulay's detailed catalogue of the fare offered him by Lady Holland, a bostees who took as anxious pride in the achievements of her kitchen," Macaulay's careful description was made to show his sisters that the great folke of Holland House lived in just. the same way as the quiet people of Bloomsbury.

But about the raine time, or a little fater, we find evidence of a very different soheme of breakfast. A let ter of Dickens from Yorkabire describes a meal of ham and eggr, pie, and a piece of beaf about the shape and size of his portmanteau with a number of sccessories During the middle years of the nineteenth century the Yorkshire breakfast, or an elaboration of it, became the standard, and the old fashion which was, in effect, what we call the Con- tinental break'ast was abandoned. By the seventies, as a contemporary elfronicler of social customs puts it, breakfast hd become "an affair of: coveird diabies." That was the age _of_breakfast_racties. Lives of great. mea of the period all remind as that. the Victorians found themselves able to be at their brightest and best digestively and intellectually, over: their morning meal.

a

There are various reasons why the breakfast of t-day has hecome jehorter, simpler matter. First there is the much greater cost of all sorts of provisions. Again, as luncheon has developed in importance, breakfast has declined, for even the largest appetites hardly call for two meals with abundant ment courres at the ekort interval between, say, 8 30 aud one o'clock. The fruit habit we have' acquired through foreign travel and, the presence of American visitoro in our midst.
