ORIGIN OF BEEFSTIAK.

Charles Lamb has told us hów the great discovery of roast pork was made; now Health explains the origin of the beefsteak,

It

that Lucius Plaucus, a Boman appears of rank, was ordered by the Emperor Trajan for some offence, to act alone of the menial sacrificers to Jupiter; he resisted, but was at length dragged to the altar. There the fragments of the victim were laid upon the fire, and the unfortunate senator was for- cibly compelled to turn them. In the process of roasting, one of the slices fell off the coals, and was caught by Plaucus in its fall. It burned his fingers, and he instinc- tively thrust them into his mouth. In that moment he had made the grand dis covery that the taste of a slice, thus car- bonaded, was infinitely beyond all the old andden cookery of Rome. A new expedient to save his dignity was suggested at the

Miss Fanny Stanley in her Grand Im.same time, and he at once evinced bis obe personation as Lady Isabel and Madame dience to the Emperor by seeming to go through the sacrifices with due regularity and his scorn of the employment by turning the whole ceremony into a matter of appetite. He swallowed every slice, deluded Trajan, defrauded Jupiter, and invented the beef- steak! A discovery of this magnitude could not be long concealed; the sacrifice began to disappear with a rapidity and satisfaction to the parties too extraordinary to be an- noticed. The priests of Jupiter adopted the practice with delight, and the King of Olympus must have been soon starved if he depended on any share of the good things of Rome.

The scheme now under consideration is one that the present Secretary of State for War has a personal interest in, for he had it well in hand when the Amy Council formed and took the question up. The previous Secretary, Mr. Brodrick, was also acquainted with it, so that it prac tically goes before the Government as the reflex of the opinions of two Secre- taries and the Army Council. RINGING THE CHANGES.

A Boy Viotirtised. The police are having a mather busy time just now, and to add to their worries the confidence trick runn or bank note swindler has made his appearance in Hongkong. These gantry have already made several successful hauls, the latest being one in which a Chineso boy was victimised to the extent of $230, with which he was entrust ed by his father. For the benefit of the uninitiated it might be as well to explain the method by which these frauds worked. Two or more men generally operate togeth and, on selecting a likely

A GUNNER'S DEATH.

A Fall Over a Bridge. Shortly after daylight on the morning of June 1 a startling discovery was made by Police Inspector Robertson. The Inspec- tor was walking in the vicinty of No. 8 Bridge, Shaukiwan, and on looking over the bridge saw the body of a man lying on the stones about twelve feet below. He caused the body to be conveyed to the Morgue where it was identified as that of Gunner Stokes, of the 83rd Company, IL. G. A.

The deceased had been stationed at Lyeemoon, and was last seen alive in Hongkong on May 30 about 10 p.m.

A post mortem examination was made by Dr Hunter who certified that death was due to an injury to the spine.

The deceased was buried by the Military authorities. The police on making inquiries came to the conclusion that the deceased met his death accidentally. There was no suspicion of foul play, and the deceased's belongings wore found intact.

The person who undertakes to get the notes changed finds on opening the roll that it consists of brown paper covered by one-dollar bill and on returning, of course, finds that the men who gave it him have departol. In this way a boy was induced to hand 8230 over to a strange man yester day, and the stranger has not been seen since. The merchants' only chauce appears to lave en when different routes presented themselves for reaching their destination. In this case the rival likin officials frequent- ly competed with each other for the pleasure of collecting the tax from them, and they were thus able to get through

A good idea of the way the tax has been collected may be gathered from the follow story told by Mr Consul Jamieson in his report on the revenue and expenditure of the Chinese Empire. A foreigner, on passing a certain likin barrier, was called upon to pay transit dues to the amount of

THE CHINA MAIL.

The occupants of a house situated at the rear of the Hungham Docks, Kowloon, were rudely awakened on the night of May 24. Just before daylight an unqual noise was heard on the roof, and before the Chi- nese woman, by whom the house WAS DOCU- pied, had time to see what was the matter a gang of appearance through a hole they had cat in the roof.

The leader of the desperadoes was armed with a modern revolver, and the rest, to the number of six, carried murderous look- ing hatchets. Of course, against an armed force like this, the woman could offer no resistance, and they accordingly went through the house very thoroughly, undis turbed.

They ransacked every likely looking place for valuables, and succeeded in carrying off clothes, money and jewellery to the value of $138. For some time after their departure the woman was too fright. oned to go for the polico, but she eventually summoned up courage and reported the matter. She, however, could not give the slightest clue as to the identity of the rob- bers, and, owing to the fact that they all had their faces blacked, identification would seem to be almost impossible.

A COMMISSIONER OF TRADE

BANQUETTED.

At the Hung Ba Laù on Saturday night Mr F. Jones, North Pacific Trade Com- missioner from Queensland, was banquet- ted by a number of Chinese merchants. Mr Chu Wan Man (Compradore, Barretto and Co.) was in the chair, and there were also present: Messrs A. A. H. Botelho, J. H. Botelho, B. J. Botelho, O. C. Barretto, A. M. da Cruz, J. F. Eca da Silva, Leung Ngan Pun, director of the You Ou Insurance Co., Ld.; Chun Poi Kai, Trustee of the Tung Wah Hospital; In Ku the International Un, compradore of Banking Corporation; Francisco To Yat, coal and general merchaut; Yip Chow, piece gooder; Leung Wai Lun, rice merchant of ook Sing Loong; Cheong Chong Chi coal merchant and stevedore Ho Sing Hing, provision merchant of Nam Hing Loong; Wu Ku__Shisk, manager Hang Loong Firm: Li Tong Wing, mer- chant; Tang Kwai Pok, compradore Mit sui Bussan Kaisha; Ho Tung San, flour- merchant of Tuck Hing & Co.; Chit Choong, coal merchant; Tang Kan Si, manager Wing On Bank; Yue Chak Sing, merchant of Wing Cheong Sing: Leung 1 Lan, coal merchant; Choi Chung Yik, manager Kai Hing Yarn and Opiuma firm; Chu Tong, iron and provision broker: Leung King Ting, merchant; Wong Lan Po, rattan manufacturer; Fung Oi Chin. opium merchant; Lun Tai, rattan manufac turer; Ng Si Kuo, flour and general mor chant; George Fook Sheng, merchant;

Tse Tsai Tai; and others.

The banquet was Chinese throughout, the usual Chineso favourite dishes being on the menu. After the King of England and Emperor of Chins had been honoured by toasts, Mr Leung Ngan Pun proposed Pros- perity to Queensland, and coupled the name of the Premier with the toast. Mr A. A. H. Botelho responded, and remarked on the straightforward business methods of Australians. Mr Ia Ku Un proposed the health of the Commissioner, to which Mr

Jones responded. He admitted that

Queensland was a young country, in fact, there were only 500.000 people there, but they had almost 500,000,000 acres for them. He had come to China to meet the Chinose merchants, and first and foremost to do business with them. He appreciated the reception that had been given him and would take away with him pleasant re-

collections.
