THE MECHANISM OF A MODERN HOTEL.

Mr Carl Ritz, who should be an authori. by on the subject, contributes to the Lon- don Magazine an interesting article on the complex problem, How to Conduct a Grent Hotel. It is an office to which few of us will be called. Most people regard paying their hotel bills, or even leaving them unpaid, as a lesser evil than conduct ing the hotels themselves, It is a respon. sable office, apparently, for the capital sunk in a large moderu hotel may be as much as £600,0 0,

is often

than £1,000,000.

In passing, Mr Ritz combats the idea that it is very expensive to live in a first-class hotel. For those who live in town only part of the year it is much cheaper than keeping up a house; and it is possible to live up to all requirements for £1 a day. Englishmen, says Mr Ritz, are little employed at hotels simply because they

and

inore

won't learn foreign languages.

In a large hotel 85 per cent. of the cooks aro French, and French is the lingua franca of the Kitelion. The qualifications needed for he post of hotel manager are very con- siderable, everything from a good manner to the mastery of a number of foreign

ongues being needed.

Fatal Accident to a German. SHANGHAI, December 22.

1 of their plates, and the general rule that they worked on seemed to be to use a fork whon a knife was wanted, to take a knife when a fork was required, and in moments of difficulty to fall back on a spoon; wat ching the old fellow chasing food alt over his plato with a piece of bread was as good as looking at à music-hall turn. When lunch was over we all had to go up into the dining-room and stand in a line cook was against this, but wo persuaded her to fall in just for the lark of the thing.

The departure of 150 men of the German garrison, from Shanghai on Saturday morn- ing was marred by a fatal accident. As the company, headed by officers and the band of the regiment, were passing the offices of the Equitable Life Insurance Society, on the Bund, the horse of a mounted infantryman collided in some way with a carriage, shied, and threw its rider. a young man 24 years of age, named H. G. Dann. Both legs of the unfortunate soldier were broken, several arteries were severed and, to make the nature of the fatality more horrible, a clasp knife in one of his trouser pockets was driven, by the force of the impact, right into the groin. Prompt assistance was immediately rendered by Dr Wendel, the regimental doctor, who was present, and a number of gentlemen who witnessed the accident. Dann was taken inside the offices of the Imporis Bank, and from there he was conveyed to the General Hospital. Here, despite every effort to save his life, the poor fellow died during the afternoon.

In connection with the departure of the troops another regrettable feature made itself apparent, and that was the absence of British officers at the jetty. The officers of the French garrison were present, and it is a pity that a misunderstanding should have interfered with the presence of the British officers to bid a hearty adieu to Owing to this their German confreres. omission, the German garrison may not be officially represented at the departure of the British troops to-day.

Later in the day on Saturday a company of the German garrison embarked on board a steaner for Tsingtao. They marched from the camp to the jetty accompanied by the regimental brass and drum and fife

bands.

The 10th Jats will start from the Jess held camp at eight o'clock this morning, At the Long-fei bridge they will be met by the Town Band, which will play them down the Malso, along the Bund, and over the Garden Bridge to the Shanghai and Hongkow Wharf, where they will embark on the transport Clire. From two till three o'clock this afternoon a reception will be held on board by Major Maxwell and the officers of the regiment. The transport will leave soon after three o'clock.-F..0. Daily Neirs.

Now,' said old Mrs Brooks rubbing her nose with the serviette, I want to talk to you. I want to make everything quite clear so that there shall be no sort of misunderstanding. James, you mustn't light up yet, and when you do light up it's got to be a cigar,'

Her husband sighed and replaced his briar pipe in his pocket.

Me and Mr Brooks,' she went on, 'have been 'ard working people all our lives, and when we began we hadn't more than about thirty-five shillings in the savings bank to

-And when the evening camo not one of the guests arrived; it turned out afterwards | that some had objected to being patronised and others had taken offence at the letters R.S.V.P. Old Mrs Brooks cried that night, and her husband came up from the other end of the long dinner table to pat her hand and comfort her, and she threw her arms round his neck and cried.

Oh, James: This is a rough world for people who've got too much money!"

She hunted all through the house for books on etiquette, but of course our late people did not want books to tell them anything on this subject, and she had to send Wilhelm along into Oxford Street. Wilhelm brought back one on The Sins of Society,' which the old lady after looking at threw into the fire; until she seemed to become quite dazed at the number of things which one was not allowed to do. She bought the weekly fashion papers and spelt out the rules in the Deportment Column about leaving cards; I heard her tell Mr Brooks that she would as lief try to learn whist, and when the old gentleman advised her not to trouble about it, sho fired up and, told him that it was their duty to live up to the now position, and as he did nothing in this way it was necessary for her to do all the more.

Hongkong Tides.

The Tide Table given below, has been compiled by the Nautical Almanac Office In London from the result of the analysis of observations taken by means of an at tomatic tide-recording machine in the Wa ter Polloe Basin at Tsim Sha Tsui during the years 1887-8-9.

The zero of the table is Low Water Or. dinary Spring Tides, which has been found to be 2 feet below mean sea level.

To obtain the depth of water on the tide gange at the Victoria Naval Yard add 6 ft., 7 in., and on the gauge at Lamont Dock, Aberdeen, add 12 ft. 9 in, to the height pivan in the table.
