Arrangements were made to provide an
ambulance for any emergency calls.
The medical and nursing work in the Manila area was under
the general supervision of the Health and Hospitalization staff
in the Central Office. Daily reports were submitted to the
Central Office from the above named quarters,
Diet Kitchens
A well equipped diet kitchen was set up in Fort William
McKinley and later in the Hotel Palma de Mallorca. The workers
in these kitchens were as follows: Fort William McKinley two
Army cooks, one Red Cross nurse, one Bureau of Health nurse, and
four helpers on day duty; one Army cook and one Red Cross nurse
on night duty. Hotel Palma de Mallorca one Red Cross nurse,
one experienced Filipino cook, one American woman, one Filipina
and one Filipino.
Water, utensils and equipment needed in the preparation of
baby formulae and special diets were sterilized and ready for
use by the mothers who wished to prepare milk and food for their
infants and young children. Milk and food were prepared by the
workers when requested by the mothers. The regular meals for
children were prepared and served in these kitchens.
