First of all, a delightful summer soup made with cucumbers! To serve 4-C, peel and thinly slice 3 large cucumbers. Cook sliced cucumbers with 2 tbsp. minced onion in 2 tbsp. fat for a min. Sprinkle in 2 tbsp. flour; add 3c, chicken or veal stock: stir until mixture reaches the boil-

ing point. Cover and cook until cu cumbers are very tender (about-15- min.). Put mixture
