NOWHERE is good cookery more important than in the prepa

ration of fish. Even so simple a dish as fried fillet has to be done just so to taste right. The most common mistake in preparing fish is over-cooking. Fish should be cooked just un- lil tender and sometimes the amount of time required for this is unbeliveably short. A 4-pound piece of fish, for example, should cook in 20 minutes. Fish fillets fry done from 3 to 5 minutes.
