Pour the marinade over the rabbi and leave for an hour, beating and turning frequently. Meanwhile pre- are the tartare sauce. Make a ten- cup of mayonnaise, and add to it tempoon finely-chopped parsley, teaspoon chopped capers, und 1 fen- spoon chopped gherkins, Mix ult together, and tum into a mure-boat.

When the rabbit has nsesined for an hour in the marinade, drain well, eout with ent and breadcrumb, and fry in deep fat till nicely browned. Drain, zerve on hot dla garnishes! with parsley.

Rabbit Baked in Milk

This is specially good for any in- valid:

Soak rubllt, and cut into joints. Etour well and place in baking tin or dish with 1 pint milk and oes margarine. Season with pepper and salt.

Cover in and lake in o moderate over 45 minutes. Keeping the meat covered while in the ovcit makes it white and tender. Five minutes lc- fore serving add 1 dessertspoon corn- flour broken to a smooth paste with water, and 1 dessertspoon chopped parsley.

Serve on hot dish with the liquor poured round.
