Tempting Rabbit Dishes

THERE are three delicious rabbit

dishes that, when tanied, willi surprise even the most severe critic! Play of Rabbit

Wash and soak into small joints. Wash and drain a breakfastcupful of rice. Heat 3 oza int in a pun, toss in it the rice and 2 thinly sliced onions. Before these Jave coloured, add the rabbit.

Pour the marinade over the rabbit and leave for an hour, beating and turning frequently. Meanwhile pre- pare the turiore sauce. Muke u tes- cup of mayonnaise, and add to it 12 teaspoon Anely-chopped parsley, 1 leaspoon chopped capers, and 1 tea- spoon chopped gherkin. Mix alt together, and turn into a pater-bogt. When the rabbit has reintioned for an hour in the marinade, drain well,! ebal with cut and breadtertan, and fry in deep fat till nicely browned. Drain, serve on hot dish establied with parsley.
