Here is a good foundation recipe: for a meringue:
Take 3 large egg whites, tea-; spoon salt, -teaspoon cream
of
tartar, 1 cup castor augor, 1 teaspoon vinegar, 1 teaspoon water, 1 teaspoon vanilla.
Add the salt and cream of tartar;
to egg whites, and beat to a stiff but no dry foam. Add sugar by table- spoonfuls at first, alternately with
the liquids mixed together. Then beat in the rest of the sugar 1 it is well blended, and the mixture has good-piling-quality:--
Spread it on an 8-9 inch well- greased glass plate. Spread higher at the rim, but keep it 1-1 Inches thick in the centre. Bake in a very slow oven (223 degs F.) for 1 hour.
When cool, pile the centre with whipped or ice cream and fruit, such| as halved peaches, and serve all
