Wash 4 ozs rice, then cook it with 1 pint milk in a double boller till it has absorbed all the milk. Add 1

to taste then oz butter, sugar beaten egg. Press the mixture into well-greased small tins or bowls decorated with 2 cherries at foot of mould.

Bake in n moderate oven 15 min- utes, or steam 40 minutes. Turn on to a hot dish, and serve with the following sauce!—

Flake up 2 ozs chocolate, and put into a saucepan with 2 ora granu- lated sugar and a tablespoon water. Sur till the Ingredients have, ali melted, and the mixture is smooth.
