RISP winter weather de- mands hot sweets to round off the menu. Now- adays diet does not allow us to indulge in schoolboy "stodge," but something nourishingly warm and sus- taining meets the bill just as well, without embarrass- ment or bulk.

Speaking of schooldays, per- haps our greatest joy was fruit-filled basin pudding of suct crust. There were lots of ideas for these, caramellised or plain. bo I guess they still top the bill.

Here is an American version you may like to try, with cran- berries.

"This delicious winter pud- ding hails from Middle West of America. Make your suci crust in the usual way, stirring in a good teaspoonful of cinnamon

to each 1lb. of flour. After mixing reserve a portion for the lid, then roll out the large piece thinly and line 1 buttered basin.

"Take equal quantities of stoned dates and prepared cran- berries. Mix and fill the basin, putting in two tablespoons of brown sugar and gill of water. Put over top a layer of pastry, and then tie down with a double layer of greased paper. (The secret of a good pudding is to keep it airtight, and so con- serve the flavour.) Steam or boil for two hours. The bitter cranberries and the sweet dates blend well."

THERE are countless ways of using breadcrumbs in pudding-spiced, baked or steamed, cabinet variety or charlotte. Here is an attractive coconut layer sweet re- cipe.
