SEASONING SENSE
VIERE are hundreds of housewives
know almost nothing about sensun~ ing.
They work along in their klichenn for years with no more flavours than aalt and white pepper, un occasional sprig of parsley from
the garden,
and a plece of mini in summer time, When they read reelpen and come across such phrases as mixed herbs, bouquet garni, or a dash of Paprika pepper, they pass them by lightly, belleving perhaps that a dish tastes. Just as well when these things are forgotten.

There are several good rules about acasoning, and all of them are aimple. Never use strong favour, unleas they are prescribed in a reclpe. And if they are, then do not ignore them. Ways With Oxtail
Do you ever treat your family to oxtall? If not, buy a tall, pre- pare it in one of the following ways. and you will enjoy it.
Here is a good American way:-- Wash the tail, cut it into joints, pour boiling water over it, and cook gently 2-3 minutes,
Drain, roll the pieces in flour, and fry in hot fat with a small onion, thinly sliced.

Remove to a casserole, and pour over the pieces of tall 2 cupfuls of tomato purce, 1 teaspoon salt, teaspoon pepper, 1⁄2 teaspoon sauce, and a small carrot, finely choppedt. Cover and cook in a very moderate oven for 3 hours, adding more water if required. There should be plenty of gravy.
Ten minutes before serving, the sulce should be thickened (it it seems at all thin) by stirring in a dessertspoon cornflour, mixed to a smooth paste with cold water. A cupful of tinned pens can be added if desired.
Here is another way of cooking oxtail:-Dip pieces of tall in sea- soned flour, and fry in a litle butter with an onion sliced. Then add 12 peppercorns, 4 cloves, and pini stock, Stew gently 4 hours. Skim well. Remove the tail from pan, strain the stock, and thicken with 1 oz. of flour, broken down to a smooth paste with cold water. Add 1 table- spoon ketchup, little gravy salt, and 1 teaspoon melted glaze. Boll 6 minutes, return tall to
pan, and allow to become quite hot. Just before dishing add gil cooking sherry. This improves the favour tremendously.
Dish on hot ashet, garnish with mashed potatoes, put through a rose forcer, and sprinkle with chopped parsley
