Royal Icing
Popular covering for the cake. Ingredients: Ab, sleved icing sugar, teaspoonful acetic acid, the whiles of four eggs, three teaspoonfuls of lemon juice.
Put the whites of the egge into a basin, add the icing sugar (sleved several times), gradually, and work well with a wooden spoon.
When the icing presents a very smooth and white appearance, add the lemon juice and acid and blend together thoroughly.

Decoration Ideas
To decorate, place the cake on a cakeboard and pipe a border round the base of the cake. A foreing bag is required for this. Repeat the border on top edge.

Iced Fairy Cakes
These always appeal to the children. The icing must nat be sticky. Here is one most suitable for litle cakes in paper cases.
Ingredients: lb. best quality icing sugar, 1 white of egg, 2 drops of acctio acid to whiten the icing.
Bieve the icing sugar twice, make a well in the centre, and stir in the beaten egg white and the two drops of acello acld. Beat untli very smooth, place a littis on the top of each small cake, and spread with a knife dipped in hot water.
When nearly set, decorate with "hundreds and thousands,” glacó cherry. a little desiccated coconut. You could also use chocolate icing.
