YOUNG man, wearied at the sight of perpetual kerchief for the head, designed this attrac tive Breton bonnet.

It suggests itself for sporta or motoring, in a 30in. square of any woollen fabric or tweed, and can be lined in silk or cotton. from another 30in square. Or you can make it in a spot or novelty fabric and line with woollen.

A Paisley sille aquare with gold-yellow ground or an embroi dered silk can be utilised similarly for evening wear-and looks chanting.

Or you can knit your own ver. sion, using a two-ply wool, No. 12 needles, and cast on 200 stitches, knitting plain for 300 rows, allow- ing. 10 roles to the inch depth. Kait the last 40 rows in a contrasting colour if you like an unusual border to your bonnet. In a tartan plaid anpora 1000l. introducing yellow, red, black, and little green, the square is luxuriantly warm and Roft.

Fashion the bonnet as sketched -it is quite simple, and can be un- folded after wearing each time, or, titched round the roll which will secure the shape.

Fish-Fruit Dishes

TRY varying your fish courses with fruit. The following recipes are

most delicious:-

Cod Hiawathan

Four cod steaks, 4 pint crushed pineapple, 1 tablespoonful of lemon juice, salt and pepper.

Arrange the cod steaks In 232 oblong Are-proof dish. Put the but- ter, crushed pineapple, and lemon juice in a pan and bring to the boll. Season and pour this sauce over the ish. Bake in a moderate oven until the fish is cooked.

Garnish with pieces of lemon and chopped parsley. This serves four persons.

Haddock and Apple

Four Alleted haddocks, 2 dessert apples, pint milk, 1 egg, lemon Julee, sall and pepper.

Season and roll up the fish. Sprinkle with lemon juice and place on a buttered fire-proof dish. Peel the apples, cut in the slices and arrange round the fish, Beat the egg and milk together and pour over the fish.

Bake in a moderate oven for 20-25 minutes.

This serves four persons.

Sole Randolf

Eight pieces of sole (Alletud), 2 oz dried apricots, 4 lb green grapes, gil of milk, 32 pint white sauce, sait and pepper.

Allow the apricots to soak in water for an hour. Drain and cut in small pieces. Stone the grapes and mix with the apricots, Season the fish and place a dessertspoonful of fruit mixture ou cach piece of sole. Roll up and arrange in a shallow buttered casserole. Add-the milk and bake in the oven until the sole is cooked. When it is ready, drain off the milk carefully, add the sauce, and reheat.

Decorate with a few grapes and chopped parsley. This serves four persons.
