You can't Hurry CURRY
E properly cooked, what is more appetising on a cool day than a plate of curry and rice?
Important things to remember are: Use Patna rico -the curry must, not be watery. Each grain of rice must be separate and dry.
And you can't make curry in a hurry. Blaw simmering is absolutely necessary. Quick cooking means leathery meat.
Cooking the Rice
Wash the Patna rice well in plenty of cold water, then put it into a pan of boiling water, to which a little lemon juice and a dessertspoonful of salt have been added,
Doll until the grains of rice have awollen but are still frm and unbroken. Then turn the rice into a strainer and hold under the running cold-water tap, shaking all the time.
Return the rice to the saucepan and stand in a warm place to heat through. Berve in a separate dish.
Savoury Curried Mutton

Green Tomato Sauce

Ingredients: 7b, green tomatoes, alu, apples, peeled and cored. lb. aliced n.lions, jib, salt, 1 teaspoonful cayenne, 4 cloves, 3 blades of mace, 2 teaspoon- fala celery seed, lilb. Demerara sugar, 1) pints vinegar
Method: Slice the apples, tomatoes and onions, mix with the sugar, kail. Pour the vinegar over spices, etc. them.
Boil gently until the sauce is thick And dark. Rub through a halt aleve. adding more vinegar if required.

Not-So-Hot Curry
Schoolchildren will relish this. Ingredienta: lib. leurs muston, i ten- spoonful of curry powder, 3 apples, jl. sultanas, lb tomatoes, 1 small onion. salt, à pint of good brown stock. 1 table- spoonful of meat extract 2 table- apoonfuls of coconut, a cupful of milk. 204. butter, 2 teaspoonfuls of cornflour. Botled rice.
Cut up the meat into very small pieces. roll them in flour mixed with n ttle salt. Soak the coconut in the boiling milk and mince the apples and the onion. Melt the butter in a frying pan. pat in the meat, apple, onion, sultanas. tomatoes and curry powder, mud fry until browned.
Turn into a saucepan, stir in a spoon- ful of chutney, the strained coconut
milk, thicken with the cornflour, then add the meat extract and almmer gently for one hour. Serve with boiled cabbage or beans

Some people prefer to omit any chulney from their curry recipe and

Ingredients: 21b. casa of marrow, apples. tomatoes, onions and unripe pluma 2 sugar, 30z sait, 2 pinis vinegar. lib. dates, ilu, sultonas, 2oz mustard seed. Joz, each of claves and chillies and a pinch of pepper, joz ginger. 40% crystallised ginger
Cook the appies in a very le water, sprinkle the prepared marrow. tomatoes, onions and plums lightly with salt, and leave overnight.
Next day. strain and cook with the apples, plecs and vinegar gently for three to four hours, adding more vine- gar as required.
Stir in the sugar. ginger, sul- tanas, and stoned and chopped dates. bring to the boil, stirring all the time.
