You can't Hurry CURRY
'F' properly cooked, what is more appetising on a cool
day than a plate of curry and rico?

Important things to remember aro; Use Patna rice -the curry must not be watery. Each grain of rice must be separato and dry.
And you can't make curry in a hurry. Blow simmering is absolutely necessary. Quick cooking means leathery meat,
Cooking the Rice
Wash the Patna rice well in plenty of cold water, then put it into a pan of boiling water, to which a little lemon juice and a dexterispoonful of salt have been added.
Dal until the grains of rice have swollen hut are still fem and unbroken. Then turn the rice into a strainer and hold under the running cold-water tap, ahaking all the time.
Return the rice to the saucepan and stand in a warm place to heat through. Berve in a separate dish.
Savoury Curried Murtan
A savoury dinner to be served with mashed potatoes and Krean vegetables. Ingredients: lib. lean mutton, 1 dessert-
spoonful curry powder, 1 teaspoon-
ful of sweet chutney, or marma- Jade. I tablespoonful of desiccated coconut, 1 large apple, one onion. the Juice of half a lemon, 2oz. butter or margarine, half pline of stock, and a heaped teaspoonful of flour, cup of milk.
Cut the mutton into small pieces, About the size of a walnut, tall them in our with a little galt. Soak the coconut in a cuplul at boiling milk. and mince the apple and the onion.
Melt the butter or the margarine in the frying pan, put in the meat, apple. onion and curry powder, and fry unti well browned. Turn into a sauterpan, stir in the chutney, the strained coco- nut milk and the lemon juice,

Mixed Vegetables
Vegetable curry is very appetising. Ingredients: 1 turnip, 1 carrot, 1 par- snip, a few peas, some lentils which have been previously soaked, 1 apple. 1 onion, 1 tablespoonful of sweet chut- ney or marmalade, a dessertspoonful cornflour 1 tablespoonful of soaked coconut in hall a capful of boiling milk. 1. margarine, and vegetable stock. 1 teaspoonful surry powder,

Ball the vegetables, except the onion. in euclent water for half an hour. then strain off the liquor, keeping it fur stock and cut the vegetables into dice.
Fry them with the chopped onion, apple and curry powder in the hot butter

well frowned. Put all into a saucepan, add the chutney, strained coconut milk, lemon juice and a tablespoonful of sultann.
Next blend the comfour with milk, add 2 teaspoonfuls el marmite, à pint of vegetable stock or the vegetable fiquid, then simmer for one buur. Serve with boiled rice.
Green Tomato Sauce
And now for a savoury sauce which is good to serve with any curry.
Ingredienta: Tib, green tomatoes, Zib. apples, pacted and cored, lb, sliced onions, i̟lb, salt, 1 teaspoonful cayenne, # cloves, 3 blades of mace, 2 teaspoon- fuis celery seed, 1}ib, Demerara stigar, 1) pints vinegar.
Method: Slice the apples, tomatoes and onions, mix with the sugar, salt. apices, etc. Pour the vinegar over them.
Boll gently until the sauce is thick and dark, Ïtub through a hair steve, adding more vinegar if required.

Not-So-Hot Curry
Brown in this the onion, stle in curry powder. flour, stock and apple, simmer Rently for half an hour. Cut three of the liard-boiled eggs in halves. Strain the curry sauce, add salt, lemon juice and chutnicy, and reheat the eggs in The muce. Pour into a dish, cut up the remaining egg into small pieces and use as a garnish together with the parsley.
Berve with a burder of rice.
Hot Mixed Chutney
Some people prefer to omit any chutney from their curry recipe and only serve the chutney separately.
Ingredients: 21b. enen of marrow, apples, tomatoen, onlona and unripe plums, 2b sugar. 3oz salt. 2 pinta vinegar, ib. dites, lib. hultanas, 2oz. mustard seed. 1oz. each of cloves and chillies and a pinch of pepper. ioz. ginger. 4oz. crystallised ginger.
Cook the appies in a very little water, sprinkle the prepared marrow. tomatoes, onions and plums lightly with salt, and leave overnight.
Next day, strain and cook with the appies, spices' and vinegar gently for three to four hours, adding more vine- gar as required.
Str in the sugar, ginger, sul- tanas, and stoned and chopped dates, bring to the boll, stirring all the time.

Cut up the raw meat into sinall plecçes. sprinkle lightly with salt and flour. Sites up the onions and try them golden brown in the margarine. buller or dripping. Add the meat and fry for 10 minutes.
Stir in the curry powder and the skinned tomatoes, then add the water of coconut milk, and continue to stir for 6 minutes Bimmer until the ment is tender. Add the lemon juice and stir in the gravy, then add the chutney.
