Cooking the Rice

Wash the Patna rice well in plenty of cold water, then put it into a pan of boiling water, to which a little lemon juice and a dessertspoonful of salt have been added.

Coll until the grains of rice have awollen but are still firm and unbroken. Then turn the rice into a strainer and hold under the running cold-water tap, shaking all the time.

Return the rice to the saucepan and stand in a warm place to lient through. Serve in a separate dish.

Savoury Curried Mutton

A savoury dinner to be served with mashed potatoes and green vegetables. Ingredients: b. lean mutton, i dessert-

spoonful curry powder, 1 teaspoon- ful of sweet chutney, or marma- inde, 1 tablespoonful of deslocated coconut: I large apple, one onion, the

fulcs of half a lemon, 2oz. butter or margarine, half a pint of stock, and heaped teaspoonful of flour, cup of milk.

And now for a savoury sauce which is good to serve with any curry,

Ingredients: 7b. green tomatoes, Zb. apples, poeled and cored, lb, silced onions, fib, salt, i teaspoonful cayenne. 6 cloves, 3 blades of mace, 2 teaspoon- fuls celery seed, Ijib, Demerara jugar, ii pinis vinegar.

Method: alice the apples, tomatoes and onions, mix with the sugar, salt, spices, etc. Pour the vinegar over them.

Boll gently until the sauce is thick and dark. Rub through a hair slave, adding more vinegar if required.

Not-So-Hot Curry

CURRY

Hot Mixed Chutney

Some people prefer to omil any chutney from their curry recipe and only serve the chutney separately.

Ingredients: 2b. esca of marrow, apples, tomatoes, onions, and unripe plums, sugar, 30% salt. 2 pints vinegar, lb. dates. 1lb. sultanas, koz mustard seed. Joz, each of cloves and chillies and a pinch of pepper, loz ginger. for crystallized ginger.

Cook the apples in a very little water, sprinkle the prepared marrow. tomatoes, onions and pluma lightly with mit, and teave overnight.

Next day. strain and cook with the apples, spices and vinegar gently for three to four hours, adding more vine gar as required.

Aur in the sugar, gluger, sul- tanas, and stoned and chopped dates. bring to the boil, atkring all the time.

Canadian Sauce

Another delicious sauce which can be served with curry, slows, or cold meat or fish,

Ingredients: 21b. apples, 11b, green tomatoes. 3 lemons, loz garlic. 3 gills soy, 1 onlon, 11ib. brown sigar, 1oz. anchovies, jos red chillies, 1) quarts vinegar. 1o, salt
